Blondies (Raw, Vegan, GF)

Came up with this delicious blondie recipe on the fly yesterday. Ohmygosh you guys, it turned out so good, I’m definitely saving this recipe to make again and again. I made a light frosting to go on top and when it hardened it came out looking like a cool marble design. 

Btw, for those of you who don’t know what a blondie is here is the traditional definition, “A blondie is a rich, sweet dessert bar. It resembles the traditional chocolate brownie, but substitutes vanilla for the cocoa used in brownies, and contains brown sugar. Blondies are made from flour, brown sugar, butter, eggs, baking powder, and vanilla, and may also contain walnuts or pecans.”

Using carob, dates, and mesquite really helped me to nail this flavor. 😙👌🏼✅ Hope you enjoy!!



Ready in 10-15 minutes

Base Ingredients

  • 2.5 cups raw walnuts (soaked for 6 hours, drained and rinsed)
  • 1.5 cups dates (I used Barhi)
  • 3 tbsp carob powder
  • 1 tbsp mesquite powder
  • 1/2 tsp ground vanilla 
  • 1 tbsp water
  • pinch sea salt


  1. Place all ingredients in a food processor.
  2. Blend on until everything is very well combined (about 60-90 seconds).
  3. Scoop into a baking pan and smooth out until it evenly covers the whole pan. 
  4. Place in refrigerator while you work on the frosting ingredients.

Frosting Ingredients

  • 1/4 raw honey
  • 4 tbsp carob powder
  • 2 tbsp coconut oil, melted
  • 1/2 tsp ground vanilla 


  1. Place all ingredients in a bowl. 
  2. Mix together until smooth and well combined. 
  3.  Place on top of Blondie batter in baking pan and smooth out until it coats the top evenly. 
  4.  Cover and place in refrigerator for a couple hours so that the frosting hardens. Cut up and serve. Keep in refrigerator to store.
