I've had this recipe on my mind for a while now and finally took the time to work on it. It took a couple tries to get the flavors to where I was satisfied. This recipe is the end result. Now you also can enjoy these super healthy falafel balls with tzatziki sauce … raw vegan style! Let me know what you think of them!
Falafel Balls
Ready in 20-30 minutes
Servings around 6
Ingredients
- 2 cups sunflower seeds (soaked for 6-8 hours)
- 1 cup carrots
- 2 tbsp tahini
- 1 small handful fresh cilantro
- ¼ cup diced red onion
- 3 garlic cloves
- 3 tbsp tamari
- 2 tbsp apple cider vinegar
- 4 tbsp nutritional yeast
- 4 tsp cumin
- 2 tsp coriander
- 2 tsp parsley
- 2 tsp curry powder
Preparation
- Place all ingredients in a food processor and mix until well combined.
- Scoop a tablespoon of the mixture out at a time and roll in your hands to form a ball. Repeat until you get through all of the mixture.
- Place balls in an airtight food safe container and store in your refrigerator until ready to serve.
- Serve balls on top of living lettuce with diced tomatoes and tzatziki sauce (recipe below).
Tzatziki Sauce
Ready in 20-30 minutes
Servings around 10-12
Ingredients
- 1 cup pine nuts, soaked for 30 minutes
- 1 cucumber, diced
- ½ tbsp apple cider vinegar
- ½ tbsp olive oil
- ½ lemon, juiced
- 1 tsp dill
- ½ tsp garlic powder
- ¼ tsp sea salt
- Pinch black pepper
Preparation
- Place all ingredients in your high speed blender and blend until mixture is smooth and creamy.
- Pour into an airtight, food safe container and refrigerate until ready to serve.
- This sauce tastes great poured over your falafel balls (recipe above).
